Sablé Sauvage is the work of a Paris-trained pastry chef who earned her Diplôme de Pâtisserie at L'École Sucrée and studied bread fundamentals at Atelier Levain — then brought both home to the Midwest. Every box is made by hand, in small numbers, and photographed somewhere green before it goes.
